Pea shoots truly taste like springtime. They have a flavor so similar to that of a sugar snap pea that it's a little uncanny.  They are fabulous to snack on, add to salads, and also can be sauteed and eaten with or as a replacement for noodles. Sauteed pea shoots are especially delicious with pesto!


Pea shoots are a good source of dietary fiber, vitamin C, E, A, and potassium.
